LOBSTER MAC & CHEESE


INGREDIENTS

8 ounces elbow macaroni (we used more "designer" looking noodles) 16 ounces heavy cream 8 ounces shredded sharp cheddar cheese 4 ounces cream cheese 6 ounces fresh grated parmesan cheese 4 ounces shredded gruyere cheese 1 lb lobster meat, chopped 1?2 cup breadcrumbs 2 garlic cloves, minced 1 shallot, minced 1 tablespoon olive oil 1 dash salt 1 dash pepper


DIRECTIONS

Bring salted water to boil and add noodles. Cook 8 - 10 minutes (do not overcook). in a double boiler, combine cheddar cheese, 4 oz. parmesan cheese, cream cheese and Gruyere cheeses. Heat until blended. Gradually add cream, stirring until smooth. In a large pan, heat olive oil, add shallots and garlic. Saute. Add lobster meat and cook until opaque. Remove from heat. Drain pasta. Add to lobster mix, then add cheese sauce, salt and pepper. Mix well. Place in casserole dish, sprinkle with remaining parmesan cheese and top with breadcrumbs. Bake at 350F for 6-8 minutes until breadcrumbs are golden brown.

INGREDIENTS

6 lbs idaho potatoes, peeled and quartered 1?2 cup butter 1 head garlic, roasted 1 (12 ounce) carton sour cream milk 1 (8 ounce) package sharp white cheddar cheese, grated 1 1?2 lbs bacon, julienned and browned 1?2 tablespoon salt 2 teaspoons ground black pepper


DIRECTIONS

In large stockpot, cook potatoes in enough salted water to cover until tender. Drain and return to stockpot. Add butter, garlic, and sourcream; beat with an electric mixer until smooth. Add a little milk, if needed. Stir in cheese, bacon, salt, and pepper. Serve immediately. Enjoy!

LOADED BAKED POTATO & CHICKEN CASSEROLE


INGREDIENTS

2 lbs chicken breasts, cubed 8 potatoes, cubed 1?3 cup olive oil 1 1?2 teaspoons salt 1 tablespoon fresh ground pepper 1 tablespoon paprika 2 tablespoons garlic powder 3 tablespoons hot sauce 2 cups cheddar cheese, shredded 1 cup bacon, crumbled 1 cup green onion, diced


DIRECTIONS

Preheat oven to 500 degrees. In large bowl mix olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add potatoes to bowl and allow to marinate for 10 minutes. Using a strainer and another bowl, drain the potatoes. Collect all remaining sauce in one bowl and set aside. Coat baking dish with cooking spray. Spread potatoes evenly in baking dish and bake for 45 minutes, stirring every 15 minutes. Fry bacon and set aside to drain. Using the bacon grease, brown the chicken cubes and add them to the remaining sauce. Coat the chicken cubes evenly in the sauce. Once potatoes are done, spread the chicken on top. Bake for 12 minutes. Crumble the bacon, grate the cheese, and chop the green onions. Layer the cheese, bacon, and half of the green onions and bake for 3 - 5 minutes more, until the cheese is melted. Add fresh green onions before serving.

INGREDIENTS

1?2 cup flour 1?2 cup sugar 4 tablespoons sour cream 1?8 teaspoon baking soda 1 large egg, room temp 1?2 teaspoon vanilla extract (or almond if you like) 3 tablespoons butter, room temp


DIRECTIONS

Preheat oven to 350. Grease and flour pan very well. I designed this to go in a petit loaf pan that measures about 5x3x2 but you can use 2 mini Bundts, 4 cupcake cups, 2 jumbo muffin cups or whatever small pan you like. When doubled it works nicely with the 6 cup Bundt pan, a 5 inch springform, 4 mini Bundts or a 7x4x3 loaf pan. Whisk together flour and sugar in small mixing bowl. In another small bowl, whisk together sour cream and baking soda. Add egg and vanilla ex, gently whisk to combine. Add the butter and 1/2 of the sour cream mixture to the flour mixture and mix with electric mixer until moistened. Beat on low for about 45 seconds. Add remaining sour cream mixture and beat on medium until well blended, 30 seconds. Don't over mix or you'll ruin the texture. Pour into prepared pan and bake until browned well and toothpick inserted in center comes out clean, about 25-30 minutes for the petit loaf pan. When doubled bake 40 minutes in the small loaf pan. Baking times vary slightly depending on which pan you use. The important thing is that the cake is browned and toothpick comes out clean when inserted in center. Cool in pan 10 minutes on rack. Remove from pan and cool completely.

INGREDIENTS

8 ounces dried linguine 8 ounces andouille turkey sausage, sliced diagonally 1/4 inch thick 1 teaspoon olive oil 8 ounces red bell peppers, cut into 1/4 x 2 inch slivers 6 ounces onions, thinly sliced 2 cloves garlic, minced 12 ounces kale, cut into 1/4 inch strips 1 cup chicken stock 1?4 cup grated parmesan cheese salt & freshly ground black pepper


DIRECTIONS

Boil linguine in salted water to desired doneness, 8-11 minutes; saute sausages in olive oil, over high heat, until lightly browned, 2-3 minutes. Add bell pepper, onion, and garlic; saute, stirring, 2-3 minutes until onion begins to brown; add kale and stir until wilted, 1-2 minutes; add broth and stir until boiling. Drain pasta and return to pan; add sausage mixture, cheese, salt and pepper; toss to combine and serve.

INGREDIENTS

1 lb linguine salt olive oil 3 tablespoons butter 2 -3 teaspoons lemon juice, to taste salt, to taste 2 cloves garlic, chopped parmesan cheese (optional)


DIRECTIONS

Cook linguine until al dente, or slightly firm to the bite. Drain, and mix with a Tbsp. or two of olive oil; set aside. Heat butter in a skillet and add lemon juice and salt. Add garlic and cook about 1 minute. Add to hot linguine and mix. Serve immediately, sprinkled with Parmesan if desired.

2 lbs haddock fillets or 2 lbs other white fish, of your choice 1 -2 lemon, juice of butter 36 Ritz crackers (1 sleeve) 1 (6 ounce) can crabmeat 1?2 cup butter, melted


DIRECTIONS

Lay your fish filets out in a lg. casserole dish, or a 9x13" baking pan. Squirt with fresh lemon juice, and dot with pats of butter. Take the sleeve of Ritz crackers and crush finely in a bowl. Add crabmeat to it, and mix well. Add 1 stick of melted butter to it, and mix well. Spread a 1" thick layer over your fish fillets. Put in a preheated 350 oven, and bake for 20-25 mins., or until fish is no longer opague in the middle. Serve with fresh lemon squirted on top.

LINDA'S PEANUT BUTTER EASTER EGGS


INGREDIENTS

1?4 lb butter, softened 8 ounces cream cheese, softened 2 lbs confectioners' sugar 1 1?2 cups peanut butter 1 1?2 teaspoons vanilla 1?2 teaspoon salt 20 -23 ounces milk chocolate chips, for milk chocolate (almost 1 lg. bag) or 20 ounces semi-sweet chocolate chips, for dark chocolate (almost 1 lg. bag)


DIRECTIONS

Mix the butter and cream cheese together. (I put mine in the microwave for 40 secs. to soften), then cream together. Add the confectionary sugar about 1 cup at a time, and mix well. (I use my hands to mix it all in). Add the peanut butter, vanilla, and salt, and mix until well-blended. (I use my hands to mix it all in). Place the mixture in the refrigerator to chill for at least 1 hours (I stick the bowl in the freezer for about 1/2 hr., to harden the dough. Form the peanut butter mixture into egg shapes, then refrigerate again for at least 1 hour (Again, I put them in the freezer instead of the fridge). Melt the chocolate in a microwave oven or in a double boiler. (I had better results using a double boiler, because the steaming water helps the chips to stay creamy longer). Quickly place the eggs, doing one at a time, in the chocolate mixture to coat the bottom, then lift it with a thin spatulda, and with a knife I spread all along the sides and top of the egg, then with the knife I fluff the top of the chocolate to make the eggs look pretty. Just press down on the chocolate and lift up, with a butter knife. Do it all over the top of the egg. You have to work quickly while the eggs are frozen, as the heat from the chocolate chips makes them soft again rather quickly. If you notice them getting too soft, stick them back in the freezer for a few minutes. Arrange the chocolate coated eggs on a waxed paper lined tray, and allow the chocolate to harden. (I stick mine in the freezer for easier handling when coating with the chocolate). Place each peanut butter egg in a paper candy cup. You can decorate your eggs with pastel colored Easter sprinkles or pastel jimmies, found in the cake/decorating section at the grocery store.

INGREDIENTS

2 2 lbs smoked ham, shoulder cut off the bone into chunks or 2 lbs chopped ham, cut into chunks 1?2 cup mayonnaise 2 tablespoons mustard 2 tablespoons hot dog relish 1 onion, sliced thin bread or roll, of your choice


DIRECTIONS

Grind the ham shoulder with a meat grinder. You can use a blender for this also, just make sure you don't put in too much at a time. Put ground meat in a bowl and add mayonnaise, mustard, and relish. Mix well. Chill until ready to make sandwiches or rolls. When ready to make sandwiches, put a good amount of meat filling on the roll. Add a slice of onion, or as much as you want. I love making these with vidalia onions, they are so sweet. Put the top piece of bread or roll on, and serve.

INGREDIENTS

1 (16 ounce) package milk chocolate chips 1 (10 ounce) box pretzel sticks 1 (5 1/2 ounce) container candy sprinkles (I used the little red and green christmas trees for the holidays)


DIRECTIONS

Put the chocolate chips in the top of a double boiler. Put water in the bottom pan, and heat the water, to melt the chocolate chips in the top pan. When chips are melted, take off stove, and dip pretzel rods first in the chocolate to about half way down the rod, then dip the tip into the sprinkles about 2" down the chocolate, and lay on waxed paper. Let the chocolate harden a good 1/2 hour. I wrapped mine individually in green saran wrap for the holidays, to keep them fresh.

INGREDIENTS

1?2 cup margarine 1 cup sugar 1 egg 1?2 teaspoon baking powder 1?4 teaspoon baking soda 1?2 - 1 teaspoon cinnamon 1?2 cup walnuts, chopped (optional) 1 cup flour 1 cup mcintosh apples (you want to use a nice sweet apple) or 1 cup other sweet apple, peeled, and chopped (you want to use a nice sweet apple)


DIRECTIONS

Preheat oven to 350. Soften margarine. Mix all ingredients together in a lg. bowl. Bake in a buttered 8x8" baking dish, for 30-40 minutes. Let cool, cut, and then store in a plastic container.
